TOP Tips for BBQ Season:

#1 Preparation is KEY!
A barbeque can sometimes be quite stressful so it is always important to ensure you can prep as much as possible in advance - this frees up time to enjoy it with your family and friends instead of slaving over the hot grill.

#2 Meat isn’t everything
Don’t limit yourself to just burgers and sausages - there’s a lot more you can do to liven up your barbeques. Try some delicious prawn skewers, marinated lamb / pork chops or even grilled fish fillets with lemon and herbs; the possibilities are endless. See below our recipe for dry rubbed BBQ pork chops.

#3 Understand your Marination
Grilled meat is so much better when it has been marinating for a few hours. We prefer to marinate ours overnight, this really allows the flavours to blend and the meat to tenderize. Try different styles; Indian with yoghurt and spices, aromatic Moroccan or a Cajun spice combination.
Always understand your marinades before grilling; a wet marinade tends to burn quickly so ensure your grill is on a medium heat and keep turning and brushing with more marinade to keep it moist.

#4 Lastly, don’t forget your umbrella
With England weather being notoriously unpredictable, always ensure you have a backup plan
for wet weather.

How to make the perfect Spiced Pork Chop:

Ingredients:

  • - 6 8oz Pork Chops
  • - 6 tbsp smoked paprika
  • - 6 tbsp Brown sugar
  • - 3 tbsp mustard powder
  • - 3 tbsp Garlic salt
  • - 3 tbsp Onion salt
  • - Salt and Pepper to taste

Method:

  1. 1. Combine all the dry ingredients together in a large mixing bowl
  2. 2. Take each pork chop and generously pat the rub onto it- ensuring it is completely covered.
  3. 3. Lay on tray, cover with foil and leave in fridge overnight.
  4. 4. Remove from the fridge and leave at room temperature 1 hour before grilling. This will make the pork cook quicker and more evenly.
  5. 5. Cook on medium heat for 5-7 minutes on each side (depending on thickness of the meat).
  6. 6. Serve with coleslaw, salad and grilled corn on the cob.
